Book excerpt: Understanding of the interactions of milk proteins in complex food systems continues to progress, resulting in specialized milk-protein based applications in functional foods, and in protein ingredients for specific health applications. Milk Proteins is the first and only presentation of the entire dairy food chain – from the source to the nutritional aspects affecting the consumer. With focus on the molecular structures and interactions of milk proteins in various processing methods, Milk Proteins presents a comprehensive overview of the biology and chemistry of milk, as well as featuring the latest science and developments. Significant insight into the use of milk proteins from an industry viewpoint provides valuable application-based information. Those working with food and nutritional research and product development will find this book useful. 20% new chapter content — full revision throughout New chapters address: role of milk proteins in human health; aspects of digestion and absorption of milk proteins in the GIT; consumer demand and future trends in milk proteins; and world supply of proteins with a focus on dairy proteins Internationally recognized authors and editors bring academic and industrial insights to this important topic

Available in PDF, EPUB and Kindle. Book excerpt: The invention of milking and milk use created a new mode of subsistence called pastoralism. On rangelands across Eurasia, pastoralists subsist by extensive animal husbandry and by processing their animals’ milk. Based on the author’s fieldwork over more than two decades, this book details the processing systems and uses of milk observed in pastoralist and farm households in West Asia, South Asia, North Asia, Central Asia, the Tibetan Plateau, and Europe and the Caucasus. Milk culture in each region is characterized by its processing technology and use of milk, and characteristics common to wider geographical spheres are identified. Inclusion of case studies from the literature expands the continent-wide perspective and provides further indications of how milk culture developed and diffused historically. The inferences drawn are expressed in the author’s monogenesis–bipolarization hypothesis of Eurasian milk culture, that milking and milk processing had a single center of origin in West Asia, and that the technology involved the spread from there across the continent, developing distinct characteristics in northern and southern spheres. Finally, because milk culture underpins pastoralism as a mode of subsistence, the typology and theory of pastoralism are re-examined from the standpoint of milk culture.

Available in PDF, EPUB and Kindle. Book excerpt: Americans have never been more concerned about their food's purity. The organic trade association claims that three-quarters of all consumers buy organic foods each year, spending billions of dollars "Dairy farm families, health officials, and food manufacturers have simultaneously stoked human desires for an all-natural product and intervened to ensure milk's safety and profitability," writes Kendra Smith-Howard. In Pure and Modern Milk, she tells the history of a nearly universal consumer product, and sheds light on America's food industry. Today, she notes, milk reaches supermarkets in an entirely different state than it had at its creation. Cows march into milking parlors, where tubes are attached to their teats, and the product of their lactation is mechanically pumped into tanks. Enormous, expensive machines pasteurize it, fortify it with vitamins, remove fat, and store it at government-regulated temperatures. It reaches consumers in a host of forms: as fluid milk, butter, ice cream, and in apparently non-dairy foods such as whey solids or milk proteins. Smith-Howard examines the cultural, political, and social context, discussing the attempts to reform the production and distribution of this once-perilous product in the Progressive Era, the history of butter between the world wars, dairy waste at mid-century, and the postwar landscape of mass production. She asks how milk could be conceptualized as a "natural" product, even as it has been incorporated into Cheez Whiz and wood glue. And she shows how consumer's changing expectations have had repercussions back down the chain, affecting farmers, cows, and rural landscapes. A groundbreaking, interdisciplinary history, this book reveals the complexity and challenges of humanity's dependence on other species.

In both countries, milk is considered to have special qualities. Drawing on ethnographic and scientific studies, popular media, and government reports, she shows that the cultural significance of milk goes well beyond its nutritive value.

Available in PDF, EPUB and Kindle. Book excerpt: For the first time, an entire publication has been dedicated to providing a critical review of the identification and analysis of the milk specific proteins such as lactalbumin, lactoferrin and casein; the non-milk specific proteins such as plasma and membrane proteins; and the minor nitrogen-containing components such as enzymes, hormones, and growth factors. Biological roles, whether nutritional, endocrinological or immunological, of the specific nitrogen compounds in mammary milk production and/or growth and development of the breast-fed infant are also presented. Identification of the molecular weight compounds that have led to questions about their function in milk and their inclusion in modern infant formulas is thoroughly discussed and of great value to scientists in sub-specialties of biochemistry, nutrition, physiology and immunology, as well as to pediatric practitioners with primary interests in the infant food industry, academia, or clinical nutrition. The thoroughness of each chapter, often providing an historical panorama of the specific aspect of milk composition, makes this book useful for both the uninitiated and expert audiences who are interested in advancing their knowledge of human milk biochemistry and its physiological significance to the recipient infant.

This book was released on 2013-09-18 with total page 856 pages. Available in PDF, EPUB and Kindle. Book excerpt: Breast feeding has a great impact on the growth of infants both physically and psychologically. Human breast milk is beneficial to infant health because it contains the necessary macro- and micro-nutrients for tissue accretion, repair and behavioural developments. The production of milk is a complex biological process and its composition and volume is dependent upon a variety of factors such as the health and dietary status of the mother. Moreover, it is influenced by the different stages and duration of breast feeding. Environmental factors, both global and local, may also alter lactation, milk composition and nutritional value. This handbook provides a unique and complete insight into the dietary and nutritional aspects of human breast milk. For a general understanding an overview is given of breast structure and function and lactation. Nutritional aspects are highlighted in a section on the composition of breast milk, including recent research results on breast milk and growth factors, vitamins, proteins and antigens, amongst others. Finally an analysis of both the beneficial and adverse factors relating to lactation and composition of breast milk are discussed.
